OVEN BAKED SWEET POTATO SKIN CHIPS
INGREDIENTS:
4-5 Medium Sweet Potatoes, washed thoroughly
1 Tablespoon Avocado Oil or Coconut Oil (melted)
1 Teaspoon Honey (optional)
Salt & Pepper to taste, as desired
Oregano (or Rosemary Spices), as desired
I, personally, use Oregano and Coconut Oil in this recipe and for sure love the honey taste in it!
HOW TO:
Preheat oven to 400 F
Peel sweet potatoes with veggie peeler, save skins for this recipe and slice your sweet potatoes for oven baked French fries later (you can store in the fridge for the next day or freeze until you need them!)
Place skins to a deep bowl. Add the rest of ingredients and mix well to coach evenly
Place skins on a baking sheet and bake about 20-30 minutes or until skins are brownish and look crispy. Make sure to move skins occasionally to avoid burns during baking.
Serve and eat immediately on a flat wide dish because crispiness won’t last long… (the difference between homemade healthy and nutritious chips and long-lived shelf products sold )
Enjoy every skin as it is rich in vitamins and minerals; high in fiber, potassium and a good source of iron which makes it a perfect snack for vegans and vegetarians!
