(makes two portions)
2 oz (1/2 pack) Shiitake Mushrooms
1 Cup Spinach (2 handfuls)
1 Tbsp Scallions, chopped (optional)
1 Handful Broccoli Sprouts (optional); use greens of your choice
1 Tbsp Grass-fed Butter or Ghee
1/2 Tsp Flax Milled Seeds
1. Beat eggs with a pinch of turmeric spice, salt and pepper according to your taste in a bowl. Set aside.
2. Preheat a skillet with some butter or ghee. Slice Mushrooms. Add spinach and mushrooms to the skillet and quickly saute on high.
3. Pour egg mixture over and cover with lid, reduce heat to low and let it bake through for about 7-10 minutes.
4. Remover from the skillet on to a plate, top omelette off with scallions, flax seeds and broccoli sprouts, or any greens of your choice.
Mushrooms and flax seeds make omelette a complete meal. I can have it as a breakfast or a quick dinner option. Easy lunch to take along to work, too! Bon Appetit!
