NO TIME CRISPY CHICKEN DINNER

Here is the quickest dinner for two.


INGREDIENTS:


2 Chicken Breasts (sliced in half, makes 4 pieces)

2 Medium Size Zucchini (sliced in circles)

1 Tsp Ghee

1/2 Cup Broccoli Sprouts (or sprouts of your choice)

1 Lemon wedge, fresh

1/2 Tsp Flax Seeds, milled

Some salt & Pepper to taste

A pinch of Italian Spice (optional)


HOW TO:


Slice chicken. Add salt, pepper and spices of your choice. Place Ghee on a skillet, let it melt on low heat, place chicken cutlets onto skillet after; only then increase the heat to maximum high (to get that grilled taste!). Once chicken edges has shown golden brown color, turn the cutlets, cover with lid and continue cook on high another minute or two. Remove chicken once cooked through and set aside. Quickly saute your zucchini in the same skillet (add a bit more ghee if necessary; however, most of the time delicious watery fat mixture from chicken breasts are enough!); saute on medium-high until it is soft (no salt!); turn and saute on another side for a minute. Add sauteed zucchini to a chicken plate and serve immediately. Top it off with broccoli sprouts (or sprouts of your choice), squeeze some lemon juice and sprinkle those flax seeds directly on zucchini slices.


TIP: This recipe tastes best cooked with ghee (especially for zucchini); however, you can use some grass-fed butter mixed with avocado oil, or use either or, whichever is available.
